Xizhou Elementary began in 1949 as a branch campus and became independent in 1952, part of the broader postwar expansion of rural schooling around Douliu. The school began serving school lunches in 1965, an early milestone in student welfare. It was renamed several times over the following decades, finally settling on "Douliu City Xizhou Elementary School" in December 1981.
溪洲國小創校於民國38年（1949年），最初為分校，民國41年（1952年）獨立設校，是戰後斗六周邊鄉村教育擴張的一環。學校自民國54年（1965年）起開辦營養午餐，是學生福利方面的早期里程碑。此後歷經數次更名，最終於民國70年（1981年）12月定名為「斗六市溪洲國民小學」。
