Jiadong Elementary opened in 1899, during the Japanese colonial era, as "石光見公學校," holding its first classes at the Sanshan Guowang Temple in Jiatongjiao. Over the following decades it was renamed repeatedly — Jiatongjiao Public School in 1900, Jiadong National School in 1941, Kaohsiung County Jiadong National School in 1946, Pingtung County Jiadong National School in 1950, and finally Jiadong Elementary School in 1968 — before moving to its current campus in 1984. The school's slogan, "客家文化 百年傳承" (Hakka Culture, a Century-Long Legacy), reflects its location near the historic Xiao family mansion, built in 1846. Its school district covers five villages — Jiadong, Liugen, Laijia, Wanjian, and Yuguang — and its old school buildings have recently been demolished and rebuilt incorporating local Hakka cultural design elements.

佳冬國小創校於1899年(明治32年)日治時期,初名「石光見公學校」,最初在佳冬(舊稱「茄苳腳」)三山國王廟開課。此後校名歷經多次更迭:1900年改為茄苳腳公學校,1941年改為佳冬國民學校,1946年改為高雄縣佳冬國民學校,1950年改為屏東縣佳冬國民學校,1968年始定名為佳冬國民小學,並於1984年(民國73年)遷至現址校園。學校校訓「客家文化 百年傳承」,正呼應其緊鄰1846年興建的蕭家古厝之地緣關係。學區涵蓋佳冬、六根、賴家、萬建、玉光五個村里,舊校舍近年已拆除重建,並融入在地客家文化設計元素。
