Founded in 1937 during the Japanese colonial era as "公立佳冬農業專修學校" (Public Jiadong Agricultural Continuation School), this institution began enrolling female students as early as 1943. Over the following decades it was renamed repeatedly as Taiwan's administrative structure changed: Kaohsiung County Junior Agricultural School in 1945, Pingtung County Jiadong Junior Agricultural Vocational School in 1950, adding a five-year integrated program in 1956, becoming Provincial Jiadong Senior Agricultural Vocational School in 1968, and finally being upgraded to National status in 2000. A supplementary evening program was added in 1984. Nearly 90 years since its founding, it remains one of Taiwan's older continuously operating agricultural vocational schools.
學校創立於1937年(昭和12年)日治時期,初名「公立佳冬農業專修學校」,並於1943年(昭和18年)起開始招收女學生。隨著台灣行政體制的變遷,校名歷經多次更迭:1945年改為高雄縣立初級農業學校,1950年改為屏東縣立佳冬初級農業職業學校,1956年增設五年一貫制,1968年改制為省立佳冬高級農業職業學校,並於2000年(民國89年)改隸國立。1984年(民國73年)另增設補校夜間部。創校近90年,至今仍是台灣歷史最悠久、持續辦學的農業職業學校之一。

Jiadong Township (佳冬鄉) is a historic Hakka farming community, home to the Xiao family mansion (蕭家古厝, built 1846) — Taiwan's only surviving five-hall six-courtyard Hakka walled compound — as well as a long tradition of salt-pond and fish-farming (虱目魚) aquaculture and dragon-fruit cultivation. As an agricultural vocational school rooted in this community since the Japanese colonial era, National Jiadong Agricultural Vocational Senior High has trained generations of local agricultural workers who sustain that farming heritage.
