大崎國小創立於民國45年（1956年）9月1日，最初為分校，於民國51年（1962年）5月獨立設校，並於民國57年（1968年）8月正式定名為大崎國小。學校推動英語讀者劇場課程，設有環境教育資訊專網，並發展出深厚的母親節活動與英語表演傳統。多個年級班級也使用Google Classroom與Microsoft Teams等數位工具，讓這所農村學校與現代數位學習接軌。
