Dongshi Elementary School opened in April 1916 as "Dongshi Harbor Public School" in Yuanshu Village, during the Japanese colonial era. It was renamed Dongshi Public School in 1921, became Dongshi National School after Taiwan's retrocession in 1946, and adopted its current name in 1957. The school is explicitly described in its own materials as serving "a typical fishing village community" where residents primarily work in fishing. It established a branch campus, Xingtuo Branch, in 1971; the main campus spans about 20,447 square meters with roughly 12 regular classes plus special-education facilities, while the branch campus covers 5,093 square meters — making Dongshi Elementary one of the older established schools in the township.

東石國小創立於大正5年(1916年)4月,日治時期原名「東石港公學校」,校址位於塩水村。大正10年(1921年)更名為東石公學校,台灣光復後於民國35年(1946年)改稱東石國民學校,並於民國46年(1957年)定名為現今的東石國小。學校自述其服務對象為「典型漁村社區」,居民多以漁業為主要生計。學校於民國60年(1971年)設立興塔分校;本校校地約20,447平方公尺,約12個普通班並設有特教設施,分校則佔地5,093平方公尺,是東石鄉歷史最悠久的學校之一。
